THE DAIRY KITCHEN Cherry Cheesecake Cocktails

These delightful 'cocktail' desserts are a simple but stunning finale to a special meal.


1 tablespoon arrowroot or cornflour
700g jar morello or sour cherries
2 tablespoons caster sugar
1 1/2 tablespoons orange liqueur
200g mascarpone cheese
1/2 cup thickened cream
2 tablespoons icing sugar, sifted
2 teaspoons ground cinnamon
almond bread or other biscuits, to serve


  1. Combine the arrowroot with a little of the cherry liquid until smooth, add to a saucepan with cherries, remaining liquid and sugar. Bring to a simmer, stirring until slightly thickened. Add 1 tablespoon orange liqueur and simmer for 1 minute then cool to room temperature. Divide cherries and syrup between 4 cocktail glasses.
  2. Whisk mascarpone, cream, icing sugar, cinnamon and remaining orange liqueur together until smooth and thick, spoon over cherries. Garnish with pieces of almond bread.
