Snappy Mac and Cheese

This quick meatless dinner will win over little tummies with its cheesy sauce and colourful vegetables.

Ingredients

10g butter
1/4 cup plain flour
500ml milk
1/2 cup grated cheddar cheese
1/2 cup grated parmesan cheese
150g macaroni, cooked until just al dente
3/4 cup frozen peas, thawed
1/2 red capsicum, chopped
1/2 cup creamed corn

Method

  1. Combine spread, flour and milk in a saucepan and bring to the boil, whisking continuously until mixture thickens. Reduce heat and simmer for 2 minutes.
  2. Add cheeses to sauce and stir until melted. Remove from heat.
  3. Stir macaroni and vegetables into the cheese sauce.
  4. Serve warm with a side salad
