These balls are a much healthier version of the very popular lamington or rum balls.

Ingredients

10 wheat cereal biscuits (eg. Weetbix or Vita Brits)
2 tablespoons cocoa powder, sifted
1/4 cup desiccated coconut
100g diced dried apricots
1/4 cup sultanas
1/2 cup skim sweetened condensed milk
175g reduced fat cream cheese, softened
1/3 cup desiccated coconut, extra for coating

Method

  1. Using clean hands, crush cereal biscuits into fine crumbs in a large bowl. Stir in cocoa, coconut and dried fruit.
  2. Mix condensed milk and cream cheese together until smooth and stir into the dry ingredients until evenly combined.
  3. Roll the mixture into bite-size balls and then roll in remaining coconut to coat. Refrigerate until ready to serve.
