Apple, Ginger and Mint Lassi

This refreshing twist on a lassi uses the classic combination of apple and ginger.

Ingredients

3 green apples
2cm piece fresh ginger (10g), grated
2 tablespoons loosely packed mint leaves
400g reduced fat natural yoghurt
2 teaspoons caster sugar
1/2 cup ice cubes

If a juicer is unavailable, try substituting apples for 350ml of cloudy apple juice.

Method
