Spiced Watermelon with Whipped Feta, Lime and Honey

A refreshingly simple yet totally irresistible summer bite, with spiced watermelon topped with cloud‑soft whipped feta and a sweet drizzle of honey.
Ingredients
- 1 mini seedless watermelon, cut into wedges or squares
- 250g smooth feta cheese
- 3 tablespoons Greek yoghurt
- 2 limes
- 2 tablespoons honey to serve - can use hot honey for a kick of heat
- 1/2 bunch mint leaves to garnish
Spice mix
- 1 heaped teaspoon fennel seeds, toasted
- 1 teaspoon ground sumac
- sea salt and black pepper to taste
- 1 tablespoon white sesame seeds, toasted
Method
- Place the feta cheese, yoghurt and juice and zest of 1/2 lime into a small food processor. Blitz until smooth and creamy.
- In a mortar and pestle crush the fennel seeds then stir in the sumac, salt, pepper and sesame seeds.
- Arrange the watermelon on a serving platter then top with a spoon of the feta mixture and sprinkle lightly with the spice mix.
- Drizzle with honey then garnish with mint leaves and serve with extra lime wedges on the side.
