With soft vermicelli noodles, crisp vegetables, silky tofu and a rich, zesty peanut satay dressing, it’s a light yet satisfying bowl perfect for busy weeknights or a refreshing lunch.
Ingredients
- 200g vermicelli noodles, cooked as per packet instructions
- 250g firm tofu, diced into small cubes
- 1 carrot, julienne sliced
- 1 red chilli, sliced thinly
- fresh mint leaves
- fresh coriander leaves
Satay dressing
- 2 tablespoons smooth or crunchy peanut butter
- 1 lime wedge, juiced
- 1 tablespoon sesame oil
- 1 tablespoon rice wine vinegar
- 1 tablespoon brown sugar or coconut sugar
- 1/2 cup thickened cream
- pinch of chilli flakes
Method
- Make the peanut satay dressing in a small bowl, whisking all ingredients together until smooth and creamy.
- Assemble your noodle bowl with all remaining ingredients and drizzle with the satay dressing to serve.
