With soft vermicelli noodles, crisp vegetables, silky tofu and a rich, zesty peanut satay dressing, it’s a light yet satisfying bowl perfect for busy weeknights or a refreshing lunch.

Ingredients

  • 200g vermicelli noodles, cooked as per packet instructions  
  • 250g firm tofu, diced into small cubes  
  • 1 carrot, julienne sliced  
  • 1 red chilli, sliced thinly  
  • fresh mint leaves  
  • fresh coriander leaves

Satay dressing 

  • 2 tablespoons smooth or crunchy peanut butter 
  • 1 lime wedge, juiced  
  • 1 tablespoon sesame oil 
  • 1 tablespoon rice wine vinegar  
  • 1 tablespoon brown sugar or coconut sugar  
  • 1/2 cup thickened cream 
  • pinch of chilli flakes   

Method

  1. Make the peanut satay dressing in a small bowl, whisking all ingredients together until smooth and creamy.
  2. Assemble your noodle bowl with all remaining ingredients and drizzle with the satay dressing to serve.
