Light, fluffy blinis topped with creamy cream cheese, smoked salmon and fresh chives make an easy, elegant bite perfect for entertaining.

Ingredients

  • 1 cup spelt flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1 large egg
  • 3/4 cup milk

To serve

  • 120g cream cheese
  • 100g smoked salmon
  • Handful chopped chives
  • Sea salt and cracked black pepper

Method

  1. In a medium mixing bowl, whisk the spelt flour, baking powder, and salt together.
  2. Crack in the egg and the milk and whisk into the dry mixture into smooth and creamy.
  3. Heat a frying pan over medium heat on the stovetop and lightly grease with oil or butter of your choice.
  4. Spoon 1 tablespoon of the batter into the frying pan. Repeat small amounts of batter (about 1 tablespoon
    per blini) onto the pan, spacing them slightly apart.
  5. Cook for 1–2 minutes or until bubbles form on the surface and the edges look set. Flip and cook for
    another 1–2 minutes, or until golden and cooked through.
  6. Remove and repeat with remaining batter.
  7. Transfer the cooked blinis to a wire rack and allow them to cool completely.
  8. Spread each blini with cream cheese and sprinkle with the chipped chives, sea salt and cracked black
    pepper.
