Mini chocolate chip cookies are bite-sized treats packed with rich, gooey chocolate chips. Perfect for snacking, parties or lunchbox surprises.
Ingredients
- 57.5g unsalted butter, diced into cubes
- 1/2 cup brown sugar
- 1/4 cup vanilla yoghurt
- ½ cup & 3 tablespoons of spelt or wholemeal flour
- 1/2 teaspoon baking soda
- Pinch of sea salt
- 100g chocolate chips or drops
Method
- Preheat an oven to 190 degrees.
- Line a baking tray with parchment paper.
- In a large mixing bowl, cream the butter and the sugar together until creamy.
- Add the remaining ingredients and fold through to combine.
- Spoon teaspoon amounts of the batter into the palm of your hand and roll roughly into a ball.
- Place the balls onto the baking tray and bake for around 9 minutes or until the cookies are golden.
- Allow the cookies to cool on the baking tray for 15 minutes before transferring to a wire rack.These cookies can be stored in an airtight container at room temperature for up to 5 days.
