Mini chocolate chip cookies are bite-sized treats packed with rich, gooey chocolate chips. Perfect for snacking, parties or lunchbox surprises.

Ingredients

  • 57.5g unsalted butter, diced into cubes
  • 1/2 cup brown sugar
  • 1/4 cup vanilla yoghurt
  • ½ cup & 3 tablespoons of spelt or wholemeal flour
  • 1/2 teaspoon baking soda
  • Pinch of sea salt
  • 100g chocolate chips or drops

Method

  1. Preheat an oven to 190 degrees.
  2. Line a baking tray with parchment paper.
  3. In a large mixing bowl, cream the butter and the sugar together until creamy.
  4. Add the remaining ingredients and fold through to combine.
  5. Spoon teaspoon amounts of the batter into the palm of your hand and roll roughly into a ball.
  6. Place the balls onto the baking tray and bake for around 9 minutes or until the cookies are golden.
  7. Allow the cookies to cool on the baking tray for 15 minutes before transferring to a wire rack.These cookies can be stored in an airtight container at room temperature for up to 5 days.
