Mexican Air Fryer Corn is a quick, flavourful twist on classic – juicy corn cobs brushed with smoky paprika yogurt sauce, air-fried to perfection, and topped with parmesan, lime, and fresh coriander.
Ingredients
- 4 corn on the cobs
- 1/2 cup natural yoghurt
- 1/2 cup grated parmesan cheese
- 1 tablespoon smoked paprika
- 1/2 lime, juiced
- 1 tablespoon water
To Serve
- 3/4 cup grated parmesan cheese
- 1 lime, zested and sliced into wedges
- Chopped coriander leaves
Method
- Combine the yogurt with the parmesan cheese, smoked paprika, lime juice and water in a small bowl until smooth and creamy.
- Brush the yoghurt sauce all over the corn cobs.
- Place the corn cobs into the air fryer basket and air fry at 180 degrees for 10-15 minutes.
- Remove from the air fryer and allow them to cool slightly.
- Top with grated parmesan cheese, lime zest and juice and chopped coriander leaves.
