Mexican Air Fryer Corn is a quick, flavourful twist on classic – juicy corn cobs brushed with smoky paprika yogurt sauce, air-fried to perfection, and topped with parmesan, lime, and fresh coriander.

Ingredients

  • 4 corn on the cobs
  • 1/2 cup natural yoghurt
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon smoked paprika
  • 1/2 lime, juiced
  • 1 tablespoon water

To Serve

  • 3/4 cup grated parmesan cheese
  • 1 lime, zested and sliced into wedges
  • Chopped coriander leaves

Method

  1. Combine the yogurt with the parmesan cheese, smoked paprika, lime juice and water in a small bowl until smooth and creamy.
  2. Brush the yoghurt sauce all over the corn cobs.
  3. Place the corn cobs into the air fryer basket and air fry at 180 degrees for 10-15 minutes.
  4. Remove from the air fryer and allow them to cool slightly.
  5. Top with grated parmesan cheese, lime zest and juice and chopped coriander leaves.
