Lemon & Herb Snapper is a light, flavourful dish featuring tender snapper fillets infused with zesty lemon and fresh herbs. Perfect for a healthy, quick dinner that’s fresh and full of taste.
Ingredients
Snapper
- 1 tablespoon olive oil
- 50g unsalted butter
- 2 small-medium snapper fillets, skin on
- Half a lemon, juiced
- Handful fresh dill
- Handful fresh parsley
- Salt & pepper
Salad dressing
- 1 cup greek or natural yoghurt
- 1/2 lemon, juiced
- 1 tablespoon water
Method
- To make the dressing, combine all salad dressing ingredients in a small bowl using a whisk until creamy and smooth. Set aside.
- Heat a large frying pan over a medium-high heat.
- Add the oil and pan fry the snapper fillets skin side down for 1 minute before adding the butter to the pan.
- Continue to pan fry the snapper for another 2 minutes and then flip it. Pan fry the second side for a total of 3 minutes.
- Transfer the snapper to a clean plate and allow it to rest for 5 minutes.
- In the frying pan add the chopped herbs and lemon juice. Allow this to simmer on a low heat for 1 minute.
- Pour the melted butter, lemon and herbs over the snapper fillets and serve with a side salad of your choice. Drizzle the yoghurt dressing over the salad and the snapper.
