High Protein Tofu Fried Rice

With golden pan‑fried tofu, fluffy eggs, crunchy veggies and lightly charred rice, it’s a satisfying weeknight dinner or meal‑prep favourite that delivers big flavour with minimal fuss.
Ingredients
- 1 tablespoon sesame oil
- 250g cooked rice
- 3 cloves of garlic, peeled and minced
- 2 cups frozen vegetables of your choice
- 2 eggs
To serve
- 375g firm tofu, sliced into small cubes and lightly pan fried until golden and crispy
- extra spring onion
- Greek or natural yoghurt
- sesame seeds
Method
- Pan fry the tofu cubes until golden and crispy, then set them aside on a plate lined with paper towels to absorb excess oil.
- In a large frying pan, add the oil and bring to a high temperature. Add the rice and pan fry on high until crispy and slightly charred.
- Add the frozen vegetables and continue to pan fry, stirring every minute.
- Crack the eggs into the rice and stir to combine with the fried rice. This will also help to cook the egg.
- Continue to stir every minute or until the fried rice is cooked to your liking.
- Serve with spring onion, Greek yoghurt and sesame seeds.
