These Grilled Chicken Souvlaki Wraps combine tender, char-grilled chicken thighs with crisp salad, warm flatbreads and a creamy homemade tzatziki for a juicy, smoky, Mediterranean-inspired flavour. Perfect for a quick family dinner, meal prep for a road trip or a relaxed weekend barbecue.

Ingredients

  • 500-800g boneless chicken thighs, trimmed and cut into thick skewer cubes of your choice

Tzatziki dressing

  • 1 cup natural yoghurt or Greek yoghurt
  • 1 Lebanese cucumber, grated
  • 1 tablespoon olive oil
  • half a lemon, juiced
  • pinch of finely chopped dill
  • pinch of finely chopped mint leaves

To serve

  • 4x flatbreads of your choice
  • 1 Lebanese cucumber, sliced into discs
  • 2 large tomatoes, sliced into wedges
  • 1 red onion, peeled and sliced finely
  • lemon juice
  • fresh dill, parsley and mint leaves

Method

  1. In a medium sized bowl, combine the tzatziki ingredients.
  2. Place the chicken onto the skewers and BBQ them for 7 minutes either side or until golden and cooked through.
  3. Quickly place the flatbreads on the BBQ for a nice char, 2 minutes either side should do the trick. Remove and place onto serving plates.
  4. Assemble your souvlaki wraps with the fresh salad ingredients, chicken skewers and drizzle with the tzatziki dressing.
  5. Season with extra lemon juice, sea salt and cracked black pepper.
