With tender grilled chicken, crisp vegetables and a light yoghurt dressing, it’s a quick and balanced bowl perfect for lunch or an easy weeknight dinner.
Ingredients
Greek yoghurt sauce
- 1 cup Greek yoghurt or natural yoghurt
- generous sprinkle of chopped parsley leaves
- 1/2 lemon, juiced
- 1/2 cup water
- 1/2 Lebanese cucumber, grated
To serve
- 220g BBQ or grilled chicken of your choice
- 1 1/2 cups cooked rice
- 1 cup canned corn kernels
- 1/2 Lebanese cucumber, sliced into discs
- hot honey
Method
- Combine the yoghurt dressing ingredients in a medium sized bowl and set aside.
- Assemble your bowls starting with a bed of cooked rice, add the corn kernels, cucumber and cooked chicken.
- Drizzle generously with the yoghurt dressing and hot honey to serve.
