With tender grilled chicken, crisp vegetables and a light yoghurt dressing, it’s a quick and balanced bowl perfect for lunch or an easy weeknight dinner.

Ingredients

Greek yoghurt sauce

  • 1 cup Greek yoghurt or natural yoghurt  
  • generous sprinkle of chopped parsley leaves  
  • 1/2 lemon, juiced  
  • 1/2 cup water 
  • 1/2 Lebanese cucumber, grated  

To serve  

  • 220g BBQ or grilled chicken of your choice  
  • 1 1/2 cups cooked rice  
  • 1 cup canned corn kernels  
  • 1/2 Lebanese cucumber, sliced into discs 
  • hot honey

Method

  1. Combine the yoghurt dressing ingredients in a medium sized bowl and set aside.  
  2. Assemble your bowls starting with a bed of cooked rice, add the corn kernels, cucumber and cooked chicken.
  3. Drizzle generously with the yoghurt dressing and hot honey to serve.
