This Feta, Lemon & Herb Spaghetti is a simple yet elegant pasta dish, ready in just 15 minutes. Tossed with crunchy walnut pangrattato, zesty lemon, creamy feta and fragrant herbs, it’s the perfect quick midweek meal or light dinner that feels gourmet without the fuss.
Ingredients
Pannagratto
- 1 cup breadcrumbs
- 3/4 cup crushed walnuts or nuts of your choice
- 1 tablespoon minced garlic
- 1 tablespoon finely chopped parsley
- 1/2 cup grated parmesan cheese
Pasta
- 200g spaghetti, cook the pasta according to the package instructions until al dente
- 1 tablespoon olive oil
To serve
- 1/4 cup good quality olive oil
- 1/2 lemon, zested and juiced
- 150g feta, crumbled
- (optional) grated parmesan cheese
- handful of parsley, finely chopped
- sea salt and cracked black pepper
Method
- In a small frying pan over a medium temperature, toast the pannagratto ingredients together until fragrant, golden and crunchy. Set aside.
- Cook the pasta as per the packet instructions.
- Transfer the pasta to serving bowls or plates of your choice and top generously with the serving ingredients.
