This Buffalo Cauliflower recipe is a lighter twist on a classic favourite! Coated in a smoky, spiced batter and air-fried to golden perfection, these cauliflower bites are served with a creamy, tangy blue cheese sauce for the ultimate flavour hit. Perfect for sharing platters, game day snacks or a quick vegetarian treat.

Ingredients

  • 1 head of cauliflower, stem removed and sliced into smaller florets of your preference
  • 1 cup flour
  • 1 tablespoon mustard powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon cumin powder
  • Sea salt and cracked black pepper
  • 1/2 cup milk

Blue cheese sauce

  • 1 cup thick yoghurt of your choice
  • 1 tablespoon lemon juice
  • cracked black pepper
  • 60g crumbly blue cheese

To serve

  • extra blue cheese crumbled
  • sea salt and cracked black pepper

Method

  1. Whisk the flour, spices and salt and pepper in a medium sized bowl until thick and creamy.
  2. Toss the cauliflower florets through the batter to evenly coat. Taking care to drip off any excess.
  3. Place the cauliflower into the air fryer basket and air fryer on 180 degrees for 6 minutes. Turn the cauliflower for 6 minutes and air fry again for another 6 minutes.
  4. Remove from the air fryer and allow to cool slightly whilst you continue with the rest of the batch.
  5. To make the blue cheese dipping sauce - combine the yoghurt, blue cheese, lemon juice and cracked black pepper in a small bowl or a blender until well combined and creamy.
  6. To serve, arrange the buffalo cauliflower over a tray or platter and drizzle with the blue cheese sauce, crumbling extra blue cheese over the cauliflower to finish it off.
