Buffalo Cauliflower with Blue Cheese Sauce

This Buffalo Cauliflower recipe is a lighter twist on a classic favourite! Coated in a smoky, spiced batter and air-fried to golden perfection, these cauliflower bites are served with a creamy, tangy blue cheese sauce for the ultimate flavour hit. Perfect for sharing platters, game day snacks or a quick vegetarian treat.
Ingredients
- 1 head of cauliflower, stem removed and sliced into smaller florets of your preference
- 1 cup flour
- 1 tablespoon mustard powder
- 1 tablespoon smoked paprika
- 1 tablespoon cumin powder
- Sea salt and cracked black pepper
- 1/2 cup milk
Blue cheese sauce
- 1 cup thick yoghurt of your choice
- 1 tablespoon lemon juice
- cracked black pepper
- 60g crumbly blue cheese
To serve
- extra blue cheese crumbled
- sea salt and cracked black pepper
Method
- Whisk the flour, spices and salt and pepper in a medium sized bowl until thick and creamy.
- Toss the cauliflower florets through the batter to evenly coat. Taking care to drip off any excess.
- Place the cauliflower into the air fryer basket and air fryer on 180 degrees for 6 minutes. Turn the cauliflower for 6 minutes and air fry again for another 6 minutes.
- Remove from the air fryer and allow to cool slightly whilst you continue with the rest of the batch.
- To make the blue cheese dipping sauce - combine the yoghurt, blue cheese, lemon juice and cracked black pepper in a small bowl or a blender until well combined and creamy.
- To serve, arrange the buffalo cauliflower over a tray or platter and drizzle with the blue cheese sauce, crumbling extra blue cheese over the cauliflower to finish it off.
