Beef Burrito Bowls are a healthy, flavourful option for busy weeks. Seasoned beef, rice, beans, fresh veggies and zesty toppings. Perfect for meal prep – easy lunches or dinners on the go.
Ingredients
- 4 cups cooked rice
- 1 tablespoon olive oil
- 500g beef mince (single serve estimate 125g)
- 1 packet store bought taco seasoning
- 420g can black beans, rinsed and drained
- 1 large avocado, stone removed and sliced into chunks
- 200g cherry tomatoes, halved
- 1 lebanese cucumber, sliced into chunks
- 1 fresh lime, sliced into 4 wedges
- 100g parmesan cheese, shaved
- Fresh coriander to serve
Method
- In a large frying pan over a high temperature, add the olive oil and the beef mince and pan fry until browned and almost cooked through.
- Add the taco seasoning and stir to combine. Remove the mince from the heat.
- Split all of the ingredients into 4 and create your meal prep bowls!
- These bowls can be stored covered in the fridge for up to 3-4 days.
