Apple Crumble Cups

These snack cups are great make-and-take breakfast on the run!
Ingredients
4 apples, peeled, cored and sliced
1/4 cup water
2 tablespoons sugar
400g vanilla yoghurt
2/3 cup muesli
1/4 cup water

Method
- Combine apples, water and sugar in a saucepan and cook, stirring occasionally, until apples are just tender, about 15 minutes. Cool and refrigerate until required.
- Layer apples, yoghurt and muesli into 4 x serving cups, finishing with a layer of yoghurt and a sprinkling of muesli. Cover and refrigerate until required.
Handy Tips
Granny Smith apples are the best for cooking!
The stewed apples can be made in advance and kept refrigerated for 5 days before assembly. Substitute stewed apples for canned fruit in natural juice if desired.
Apple Crumble Cups will only last a day or two in the fridge once assembled, as the muesli can become soggy.
