Cream is a dairy staple in many kitchens around Australia and can be enjoyed fresh or in cooking.
It is made by separating fresh milk in a centrifuge, where skim milk is thrown to the outside of the bowl and cream remains in the centre. It is then pasteurised, and additional ingredients may or may not be added, depending on the product being manufactured.
The composition of dairy products in Australia is regulated by the Food Standards Australia New Zealand Code. As per the code, for a product to be defined as cream, it must have a minimum of 35% milk fat. However, the code does not assign composition parameters to single, double or pure cream. These are often simply used as marketing descriptors.
Further information on the different types and uses of cream can be found on the Dairy Australia website.
