Friands

Friands are delightful moist and fudgey almond cakes cooked in an oval shaped pan. If a friand pan is unavailable, use traditional muffin pan.

Ingredients

1 cup plain flour, sifted
1 1/2 cups icing sugar, sifted
1 cup ground almonds
2 teaspoons finely grated lemon, lime or orange rind or vanilla paste
5 egg whites
200g butter, melted
additions of choice (see note)
Handy Tips
Additions - 120g fresh or frozen raspberries, blueberries or sliced strawberries to mixture or half fill friand pan with mixture, sprinkle with berries and top with remaining mixture - 30g nuts of choice

Method

  1. Combine flour, sugar, almonds and rind.
  2. Beat egg whites until soft peaks form and gently fold into dry mixture. Add butter and mix until just combined
  3. Spoon mixture into 12, 1/2-cup capacity buttered oval friand pans. Bake at 200°C for 25 minutes until cooked through. Allow to cool 5 minutes before turning out. Serve dusted with icing sugar.
