Permeate is the technical term for a component of milk, containing mainly lactose, vitamins and minerals.

Permeate is produced when milk undergoes ultrafiltration, just like passing milk through a very fine sieve, a process used in making different dairy products. Milk manufacturers often add permeate to cow’s milk in order to adjust amounts of protein and fat to desired levels. This standardisation ensures customers get a consistent product year round, given the natural fluctuation in milk composition that occurs from different cow breeds, seasons and regions.

In recent years, permeate free milks have been marketed in line with consumer desire for products with minimal processing. Permeate is a natural nutritious part of milk, however some consumers prefer to purchase milk that has not had permeate added. Some manufacturers therefore choose not to use permeate and label their milk as “permeate free” or “no added permeate”.

There are many other dairy food options that are naturally lactose free and also lactose free milks and yoghurts that have been modified if you or a family member requires lactose free foods.
