In Australia, most cheeses rely on natural preservation methods, but some may contain added preservatives, especially in processed varieties.  

Natural preservatives in Australian cheese: 

  • Salt – used widely in cheddar, feta, and hard cheeses to inhibit bacterial growth.

  • Lactic acid bacteria – naturally lowers pH to prevent spoilage.

  • Aging & rinds – hard cheeses like parmesan develop a protective rind that acts as a natural preservative.


Added preservatives in some Australian cheeses: 

  • Natamycin (E235) – a natural antifungal used on the rind of some commercial cheeses to prevent mould.

  • Sorbic Acid (E200) – found in some shredded, sliced, or processed cheeses to extend shelf life.

  • Nitrates (E251, E252) – occasionally used in aged cheeses like Swiss to prevent unwanted bacterial growth.


Cheese without added preservatives:
Most artisan and fresh cheeses (e.g. mozzarella, ricotta, paneer) in Australia are free from additives but have a shorter shelf life.
