Long-life or UHT (ultra-heat treatment) milk is heated to 140°C for two seconds, then packaged aseptically. This process kills off any harmful bacteria and microorganisms, keeping the milk safe and extending its shelf life. That’s why UHT milk can be stored at room temperature until you open it.
By comparison, conventional pasteurisation (the one applied to the milk you find in the fridge) heats milk to 72°C for at least 15 seconds before cooling it immediately.
So, whether you're reaching for long-life or chilled milk, rest assured both are carefully treated to keep your milk fresh and safe!
