Washed Rind with Golden Raisins, Rosemary and Crostini

A good robust washed rind will match perfectly to these roasted raisins with rosemary. Enjoy with a lovely wine or coffee.

Ingredients

1 baguette
50g butter, melted
1 large sprig rosemary
1/3 cup golden raisins
1 wheel washed rind cheese
1 tablespoon honey

Method

  1. Slice the baguette on a diagonal as thinly as possible. Use the rosemary sprig to brush butter onto the baguette and arrange on a baking tray. Bake at 180°C for 10 minutes, turn and bake for a further 5 minutes until bread is golden and dry.
  2. Break rosemary into small sprigs and toss in any remaining butter, place on a lined baking tray with raisins. Bake at 200°C for 5 minutes or until warm and raisins are glistening.
  3. To serve, pile warm raisins and rosemary onto the cheese and drizzle with honey. Serve alongside crostini.
