Flavoured butters make the most wonderful accompaniments are barbecues with grilled meats. Roll each into a log, freeze them and slice off a portion when you need a flavour boost.
Ingredients
125g softened butterAnchovy and Caper Butter
20g each finely chopped anchovy fillets and capers1 teaspoon finely chopped fresh dill
Olive and Chilli Garlic Butter
40g pitted, finely chopped kalamata olives2 crushed cloves garlic
1-2 finely chopped chillies
Thai Chilli Butter
4 chopped small red chillies1 tablespoon chopped fresh coriander
1 tablespoon finely chopped fresh lemongrass.
Method
- Place softened butter in a bowl, and mix in your flavourings of choice.
- Spoon flavoured butter onto a sheet of baking paper, roughly in the shape of a log. Fold the baking paper in half over the butter to enclose it.
- Place the edge of a ruler along edge of the butter log (on top of the baking paper). Push the ruler away from you, towards the butter, creating some pressure on the baking paper, while you use the opposite hand to pull the bottom sheet of baking paper towards you. This will help you form the perfect log. When you are satisfied with the log, tie off the ends like a bon bon and refrigerate or freeze until required.
