Salmon and Potato Salad with Lemon Poppy Seed Dressing

This light and colourful potato salad is perfect for a light dinner or summer entertaining.

Ingredients

750g chat potatoes
100g snowpeas, trimmed and halved
100g smoked salmon, cut into thin strips
1/2 yellow capsicum, cut into strips
2/3 cup natural yoghurt
1 tablespoon lemon juice
1 teaspoon finely grated lemon rind
2 teaspoons poppy seeds
salt and freshly ground black pepper, to taste

Method

  1. Boil potatoes until just tender. Add snowpeas to saucepan and cook for 1 minute and drain under cold running water. Allow to cool.
  2. Halve potatoes and arrange in a serving bowl with snowpeas, salmon and capsicum.
  3. Combine yoghurt, lemon juice, rind and poppy seeds, season to taste and drizzle over salad.
