Grilled Garlic Mushrooms with Garlic Yoghurt Dressing

Perfect for breakfast or as a side to grilled meats, these meaty mushrooms with their tangy yoghurt dressing are sure to delight.

Ingredients

1 tablespoon (20g) reduced fat dairy spread
1 clove garlic, crushed
4 large field mushrooms
1 cup kkim or low Fat natural yoghurt
1/2 red capsicum, diced
2 tablespoons finely chopped fresh parsley
pepper, to taste

Method

  1. Heat dairy spread and half the garlic in a frypan until melted. Add mushrooms and saute for 2-3 minutes.
  2. Remove from frypan and place under a hot grill and cook for a further 5 minutes or until tender.
  3. Combine yoghurt, red capsicum, parsley and remaining garlic and season to taste.
  4. Top mushrooms with yoghurt dressing and serve.
