Thyme Baked Potatoes with Feta

Give your roast potatoes a salty, creamy and cheesy twist with crumbled feta.

Ingredients

4 medium potatoes, cubed
olive oil spray
1 teaspoon fresh thyme leaves, chopped
1/2 teaspoon finely grated lemon rind
freshly ground black pepper, to taste
40g feta, crumbed

Method

  1. Place potatoes onto a lined oven tray and spray with oil. Sprinkle with thyme, lemon rind and pepper. Bake at 200°C for 15-20 minutes or until golden and tender.
  2. Place potatoes in a serving bowl and sprinkle with feta. Serve warm.
