A creamy chicken ribbon sandwich is always a crowd pleaser for entertaining. This twist on the classic spices things up with Asian inspired flavours and soft Japanese milk bread (Shokupan).
Ingredients
80g salted peanuts50ml sweet chilli sauce
2 teaspoons freshly grated ginger
2 cloves garlic, crushed
30g chopped coriander
30g chopped basil
Juice of 1 lime
125g spreadable cream cheese
500g chicken breast, poached and chopped
1 loaf (20 slices) Shokupan bread or white square sandwich bread
watercress for garnish
Method
- Process peanuts, sauce, ginger, garlic, coriander, basil and lime in a food processor until smooth. Fold in cream cheese and chicken.
- Sandwich slices of bread together with chicken mixture, trim crusts off and cut each into four finger sandwiches or points. Keep covered with plastic wrap to prevent drying out.
- Serve topped with a sprig of watercress if desired.
