Creamy Ginger, Herb & Chicken Sandwiches

A creamy chicken ribbon sandwich is always a crowd pleaser for entertaining. This twist on the classic spices things up with Asian inspired flavours and soft Japanese milk bread (Shokupan).

Ingredients

80g salted peanuts
50ml sweet chilli sauce
2 teaspoons freshly grated ginger
2 cloves garlic, crushed
30g chopped coriander
30g chopped basil
Juice of 1 lime
125g spreadable cream cheese
500g chicken breast, poached and chopped
1 loaf (20 slices) Shokupan bread or white square sandwich bread
watercress for garnish

Method

  1. Process peanuts, sauce, ginger, garlic, coriander, basil and lime in a food processor until smooth. Fold in cream cheese and chicken.
  2. Sandwich slices of bread together with chicken mixture, trim crusts off and cut each into four finger sandwiches or points. Keep covered with plastic wrap to prevent drying out.
  3. Serve topped with a sprig of watercress if desired.
