Food safety is a priority for everyone in the dairy supply chain—from farmers to processors. All dairy processors and manufacturers are licensed by relevant state food authorities, which conduct regular audits to ensure compliance with food safety plans.
The frequency of these audits depends on the nature of the business and its past compliance history, but most dairy processors are audited at least twice a year. These audits may be announced or unannounced, keeping manufacturers on their toes to maintain high standards.
Processors who export dairy products must also follow the requirements of their export licence, which is maintained by the Department of Agriculture, Fisheries and Forestry (DAFF). Export audits are conducted annually by DAFF appointed auditors or in collaboration with state food authorities.
In addition to regulatory audits, processors supply large customers including Coles, Woolworths, multinational food companies and quick service restaurant chains are subject to food safety audits by these customers. The frequency of these audits is determined by the supply contract to these customers but in most cases are performed on an annual basis.
