Does ice-cream require double pasteurisation in Australia?
For a product to be classified as ice cream, the Food Standards Code requires cream or milk products to be on the list of ingredients.
Both cream and milk must be pasteurised according to their respective standards as outlined in the Code.
When included as an ingredient in ice cream, there is no requirement that they need to be pasteurised again.
