Papadums make the most light and crisp carrier for the aromatic tandoori chicken and mint yoghurt sauce.
Ingredients
100g packet mini papadums
200g tub Greek-style natural yoghurt
2 tablespoons finely chopped mint
500g shredded or diced tandoori chicken breast
1/4 continental cucumber, cut into thin strips

Method
- Prepare pappadums according to manufacturer's instructions.
- Combine yoghurt and mint and spoon evenly over papadums.
- Top evenly with tandoori chicken and cucumber and serve immediately as an appetiser.
