Papadums make the most light and crisp carrier for the aromatic tandoori chicken and mint yoghurt sauce.

Ingredients

100g packet mini papadums
200g tub Greek-style natural yoghurt
2 tablespoons finely chopped mint
500g shredded or diced tandoori chicken breast
1/4 continental cucumber, cut into thin strips

Method

  1. Prepare pappadums according to manufacturer's instructions.
  2. Combine yoghurt and mint and spoon evenly over papadums.
  3. Top evenly with tandoori chicken and cucumber and serve immediately as an appetiser.
