Spaghetti and Meatballs all Covered in Cheese

These kid friendly meatballs will become a new family favourite. Adding a little parmesan to the meatball mix adds an extra flavour boost.
Ingredients
2 teaspoons olive oil
2 rashers short cut rindless bacon, finely chopped
1 medium onion, finely chopped
1 medium carrot, grated
500g beef mince
1 cup fresh breadcrumbs
2 tablespoons grated parmesan cheese
1 tablespoon tomato sauce
1 tablespoon BBQ sauce
1 egg, lightly beaten
salt and pepper, to taste
olive oil, extra, for cooking500g jar tomato pasta sauce with onion and garlic
1/2 cup water
500g cooked spaghetti
grated parmesan cheese, to serve

500g cooked spaghetti

Method
- Heat oil in a frying pan over medium heat. Add bacon and onion and cook for 5-8 minutes or until soft. Add the carrot and cook for a further 5 minutes or until soft. Remove and set aside to cool.
- Place the bacon mixture, mince, breadcrumbs, cheese, sauces and egg in a large bowl and season well. Roll tablespoons of mixture into balls. Heat oil in a frying pan and cook meatballs, in two batches, until browned. Add all meatballs to the pan and pour over pasta sauce and water. Simmer for 10-15 minutes or until sauce has slightly thickened.
- Serve over cooked pasta topped with grated parmesan cheese.
Handy Tips
You can also add the water to the emptied jar, return lid and shake it, to help loosen any remain stuck sauce in the jar.
