A classic afternoon tea slice with tart apples, plump raisins and a tangy sour cream custard.

Ingredients

1 1/2 cups self raising flour
1/4 cup caster sugar
60g butter
1/2 cup lemon juice3 cooking apples, peeled and sliced into thin wedges
1/2 cup raisins
2 teaspoons grated lemon Rind
3 eggs, lightly beaten
300ml light sour cream
1/4 cup caster sugar

Method

  1. For the base, combine flour and sugar then rub in butter until mixture resembles fine breadcrumbs. Add lemon juice to form a soft dough then knead lightly on a floured bench. Roll pastry out to line the base of a buttered and lined 23cm square cake tin, pierce lightly with a fork, refrigerate for 10 minutes, before baking at 180°C for 10 minutes.
  2. For the filling, fan apples out over the cooked pastry, sprinkle with raisins and lemon rind. Beat eggs, sour cream and sugar together until smooth and pour over apple. Bake for 30 minutes or until set. Cool before slicing.
