This mexican inspired sandwich is a fresh take on a cheese toastie
Ingredients
1 small can corn kernels
1/2 large red capsicum, chopped
1 spring onion, sliced
1 tablespoon freshly chopped coriander
4 slices white bread
butter, for spreading
100g smoked chicken breast, sliced
80g vintage cheddar cheese, sliced

Method
- Mix corn, capsicum, spring onion and coriander.
- Spread bread with butter on one side. Top two slices of bread, buttered-side down with cheese, chicken and corn salsa, sandwich with remaining bread, buttered-side up.
- Toast in a sandwich press until golden and toasted.
Handy Tips
Corn salsa will keep for a few days in the fridge.
Try making this sandwich with tortillas instead of bread.
