This mexican inspired sandwich is a fresh take on a cheese toastie

Ingredients

1 small can corn kernels
1/2 large red capsicum, chopped
1 spring onion, sliced
1 tablespoon freshly chopped coriander
4 slices white bread
butter, for spreading
100g smoked chicken breast, sliced
80g vintage cheddar cheese, sliced

Method

  1. Mix corn, capsicum, spring onion and coriander.
  2. Spread bread with butter on one side. Top two slices of bread, buttered-side down with cheese, chicken and corn salsa, sandwich with remaining bread, buttered-side up.
  3. Toast in a sandwich press until golden and toasted.
Handy Tips

Corn salsa will keep for a few days in the fridge.
Try making this sandwich with tortillas instead of bread.
