Smoked Salmon, Feta and Rocket Linguine

This light and summery pasta is ideal to serve in the summer months.
Ingredients
400g linguine pasta
300g feta cheese, crumbled
200g smoked salmon, torn into bite-size pieces
150g rocket leaves
1 cup basil leaves, chopped
3 spring onions, finely sliced
1 teaspoon finely grated lemon rind
1/4 cup lemon juice
1/4 cup extra virgin olive oil
freshly ground black pepper, to taste
1/3 cup shaved parmesan, for serving

Method
- Cook linguine in boiling salted water until al dente, drain and return to pot.
- Stir in feta, salmon, rocket, basil, spring onions, lemon rind and juice, olive oil and pepper.
- Divide between serving plates and top with shaved parmesan.
