A fresh and healthy twist on the traditional slaw.
Ingredients
100g red cabbage, thinly shredded
100g snowpeas, thinly sliced
1 large carrot, peeled and grated
1/2 red capsicum, thinly sliced
1/2 cup natural yoghurt
1/2 cup coriander leaves, chopped
1 teaspoon finely grated orange rind
freshly ground black pepper, to taste

Method
- Toss the vegetables together in a large bowl. Add remaining ingredients and mix until well coated.
