Our Favourite Choc-chip Macadamia Biscuits

if you like your choc chip cookies with a buttery crispness, then these are for you. We love the addition of rich macadamias but try substituting your nuts of choice!

Ingredients

125g butter, softened
1/3 cup caster sugar
1 large egg, lightly beaten
1 1/3 cups self raising flour
1/3 cup white chocolate chips
1/3 cup dark chocolate chips
1/2 cup roughly chopped macadamia nuts

Method

  1. Cream the butter and sugar until light and creamy (for tips see our video).
  2. beat in egg until well combined Stir in flour and remaining ingredients to make a soft dough.
  3. Roll heaped tablespoonfuls of mixture into balls and lightly press onto baking paper lined trays.
  4. Bake at 180°C for 20 minutes or until golden. Stand on tray for 5 minutes before transferring to a wire rack to cool completely. Store in an airtight container.
Handy Tips

These cookies are also delicious made with chopped roasted hazelnuts, blanched almonds or pistachio nuts.
