Our Favourite Choc-chip Macadamia Biscuits

if you like your choc chip cookies with a buttery crispness, then these are for you. We love the addition of rich macadamias but try substituting your nuts of choice!
Ingredients
125g butter, softened
1/3 cup caster sugar
1 large egg, lightly beaten
1 1/3 cups self raising flour
1/3 cup white chocolate chips
1/3 cup dark chocolate chips
1/2 cup roughly chopped macadamia nuts

Method
- Cream the butter and sugar until light and creamy (for tips see our video).
- beat in egg until well combined Stir in flour and remaining ingredients to make a soft dough.
- Roll heaped tablespoonfuls of mixture into balls and lightly press onto baking paper lined trays.
- Bake at 180°C for 20 minutes or until golden. Stand on tray for 5 minutes before transferring to a wire rack to cool completely. Store in an airtight container.
Handy Tips
These cookies are also delicious made with chopped roasted hazelnuts, blanched almonds or pistachio nuts.
