Mango and Orange Bircher Muesli

Don't be put off by the long list of ingredients, this Bircher is worth it! It's a great brekky to meal-prep as it'll keep for several days in the fridge. If you prefer a less-sweet Bircher, use natural yoghurt.
Ingredients
2 cups rolled oats
1/4 cup roasted macadamia nuts, chopped
1/4 cup roasted hazelnuts, chopped
1/4 cup shredded coconut
2 tablespoons pepitas
2 tablespoons sunflower seeds
2 tablespoons chia or linseed
1/2 cup chopped dried apricots
1/4 cup dried sour cherries or cranberries
1 green apple, grated
1/2 teaspoon finely grated orange rind
1 cup freshly squeezed orange juice
1 cup water
500g mango flavoured yoghurt
fresh seasonal fruit and mango yoghurt, for serving

Method
- Combine oats, nuts, coconut, seeds, dried fruit, apple, orange rind, juice, water and yoghurt in a large container and refrigerate overnight.
- To serve, spoon the muesli into bowls and top with extra yoghurt and fruit.
Handy Tips
You can use any yoghurt for this bircher muesli, either flavoured or natural.
