Try this healthier version of the pub-classic chicken parmigiana.

Ingredients

4 chicken breast fillets
olive oil spray
1 cup Italian tomato pasta sauce
4 thin slices, lean ham
1/2 cup parmesan, grated
1/2 cup mozzarella, grated

Method

  1. Spray each chicken fillet with a little olive oil spray, panfry or airfry until browned and almost cooked through. Transfer to a baking paper lined oven tray.
  2. Spread pasta sauce on chicken, top each fillet with a slice of ham and sprinkle with cheeses, bake at 180°C until cheese is golden and bubbly. Serve with vegetables or crisp green salad.
