Picture serving these up on a warm afternoon after a BBQ, then sitting back and enjoying the compliments!

Ingredients

250g punnet raspberries
8 mini brioche buns
4 scoops your favourite ice cream or gelato

Method

  1. Split the brioche buns and lightly toast the inside of the bun under a hot grill.
  2. Roughly squash raspberries with a fork and spoon onto the base of the brioche buns
  3. Fill each bun with a scoop of ice cream or gelato and serve immediately.
Handy Tips

In place of raspberries, try draping slices of mango over the ice cream.
