Friands are delightful moist and fudgey almond cakes cooked in an oval shaped pan. If a friand pan is unavailable, use traditional muffin pan.
Ingredients
1 cup plain flour, sifted
1 1/2 cups icing sugar, sifted
1 cup ground almonds
2 teaspoons finely grated lemon, lime or orange rind or vanilla paste
5 egg whites
200g butter, melted
additions of choice (see note)

Method
- Combine flour, sugar, almonds and rind.
- Beat egg whites until soft peaks form and gently fold into dry mixture. Add butter and mix until just combined
- Spoon mixture into 12, 1/2-cup capacity buttered oval friand pans. Bake at 200°C for 25 minutes until cooked through. Allow to cool 5 minutes before turning out. Serve dusted with icing sugar.
Handy Tips
Additions
- 120g fresh or frozen raspberries, blueberries or sliced strawberries to mixture or half fill friand pan with mixture, sprinkle with berries and top with remaining mixture
- 30g nuts of choice
