This dairy-rich side is perfect to serve with grilled meats or to use on top of shepherd's pie.

Ingredients

4 medium potatoes, peeled and chopped
1/4 cup milk, warmed
100g feta, crumbled
40g grated parmesan cheese
2 tablespoons finely snipped chives
freshly ground black pepper, to taste

Method

  1. Cook potatoes in boiling salted water until tender. Drain.
  2. Using a potato masher, mash hot potatoes until smooth. Add milk, feta, parmesan and chives and stir until combined. Season to taste.
Handy Tips

Adding hot milk to mash ensures it stays piping hot and extra creamy. Also try mixing in grated cheddar or even crumbled blue cheese.
