Chocolate Peanut and Raspberry Protein Bars

These protein bars are a great dessert or snack after exercise.

Ingredients

1/2 cup rolled oats
1/4 cup cocoa powder
60g chocolate or vanilla protein powder
1/3 cup firmly packed brown sugar
1/4 cup peanut butter
2 eggs
120g apple puree
1/2 cup reduced fat milk
150g fresh ricotta, crumbled
1/4 cup dry roasted peanuts
1/2 cup frozen raspberries

Method

  1. Blend oats in a food processor until the consistency of flour, tip into a bowl and sift in cocoa then stir in protein powder and sugar.
  2. Whisk peanut butter, eggs, apple sauce and milk together until combined and then gently stir into dry ingredients. Spread mixture into a baking paper lined 17x26cm slice tin.
  3. Crumble ricotta over the brownie mixture and sprinkle with nuts and raspberries, pressing in slightly. Bake at 180°C for 20-25 minutes or until only just cooked through.
