Chocolate Peanut and Raspberry Protein Bars

These protein bars are a great dessert or snack after exercise.
Ingredients
1/2 cup rolled oats
1/4 cup cocoa powder
60g chocolate or vanilla protein powder
1/3 cup firmly packed brown sugar
1/4 cup peanut butter
2 eggs
120g apple puree
1/2 cup reduced fat milk
150g fresh ricotta, crumbled
1/4 cup dry roasted peanuts
1/2 cup frozen raspberries
1/4 cup cocoa powder
60g chocolate or vanilla protein powder
1/3 cup firmly packed brown sugar
1/4 cup peanut butter

120g apple puree
1/2 cup reduced fat milk
150g fresh ricotta, crumbled
1/4 cup dry roasted peanuts
1/2 cup frozen raspberries
Method
- Blend oats in a food processor until the consistency of flour, tip into a bowl and sift in cocoa then stir in protein powder and sugar.
- Whisk peanut butter, eggs, apple sauce and milk together until combined and then gently stir into dry ingredients. Spread mixture into a baking paper lined 17x26cm slice tin.
- Crumble ricotta over the brownie mixture and sprinkle with nuts and raspberries, pressing in slightly. Bake at 180°C for 20-25 minutes or until only just cooked through.
