Chicken Waldorf Salad

A deliciously sweet, savoury, crunchy salad that's full of goodness and makes a great light lunch or dinner.
Ingredients
1 roast chicken, cut into bite-size pieces
3 celery stalks, sliced diagonally plus any young celery leaves
2 apples, cored and cut into thin batons
1/2 cup walnut pieces
1/4 cup sour cream or Greek style yoghurt
1 tablespoon lemon juice
2 teaspoons wholegrain mustard
salt and freshly ground black pepper, to taste
1/2 cup shaved parmesan cheese, for sprinkling.

Method
- Combine, chicken, celery, apple and walnuts in a large bowl.
- Mix sour cream with lemon, mustard and season to taste.
- Pour dressing over the salad and toss to combine. Sprinkle with parmesan and black pepper before serving.
