Cheesy Corn Cobs

Get kids to fall in love with corn, by smothering it in cheese - Mexican-style. This recipe serves 10 making it great for a party, but the concept can be adapted to serve less.

Ingredients

2 tablespoons mayonnaise
1 cup finely grated cheddar cheese
2 tablespoons finely chopped fresh chives, optional
5 cobs fresh corn, cut in half or 10 pieces frozen corn
Lime wedges, for serving

Method

  1. Boil or steam each corn cob until just tender but still crunchy. Insert a skewer into each one.
  2. Brush each corn cob with mayonnaise and place on a tray, sprinkle with grated cheese and chives. 
  3. Stand for 5-10 minutes in a warm oven or until cheese is slightly melted, before serving with a squeeze of lime if desired. 
Handy Tips

For adventurous eaters, try mixing the cheese with other flavours such as smoked paprika, chopped coriander and a squeeze of lime.
