Blue Cheese and Thyme Scones

A delicious savoury scone that is great to use up that bit of leftover blue from your cheeseboard!

Ingredients

50g butter, chilled and chopped
2 cups self raising flour
3/4 cup milk
80g blue cheese, finely crumbled
2 teaspoons fresh thyme leaves
milk, extra, for brushing
caramelised onions, for serving
blue cheese, for serving

Method

  1. Rub butter into flour until mixture resembles fine breadcrumbs.
  2. Add milk, blue cheese and thyme and stir with a round bladed knife stir until mixture comes together. Turn onto a lightly floured bench and knead only until just smooth.
  3. Pat out mixture until 2.5cm thick, measuring 16cm x 16cm and using a sharp knife, cut into 9 squares. Place on a paper lined tray, brush with extra milk and bake at 220oC for 15-20 minutes or until golden brown, and scones sound hollow when tapped. Remove from oven and wrap in a clean towel for 5-10 minutes.
  4. Serve warm with caramelised onions and extra blue cheese.
Handy Tips

Tip:
Scones are best made and enjoyed on the same day.
Use a full flavoured blue cheese for robust flavoured scones.
