A good buttery biscuit is a simple delight. These biscuits are great served plain or can be iced with fondant or royal icing.
Ingredients
250g butter, softened
1 cup caster sugar
2 eggs, lightly beaten
2 teaspoons vanilla essence
2 cups self-raising flour
2 cups plain flour

Method
- Cream butter and caster sugar together until light and creamy. Gradually beat in eggs and vanilla essence.
- Sift both flours into the butter mixture and fold in to make a stiff dough. Knead lightly and roll out to 5mm thickness, cut into shapes and place on buttered baking trays.
- Bake at 180°C for 10-12 minutes or until golden. Alternatively, mixture may also be rolled into balls and flattened with a fork to make round biscuits.
