A good buttery biscuit is a simple delight. These biscuits are great served plain or can be iced with fondant or royal icing.

Ingredients

250g butter, softened
1 cup caster sugar
2 eggs, lightly beaten
2 teaspoons vanilla essence
2 cups self-raising flour
2 cups plain flour

Method

  1. Cream butter and caster sugar together until light and creamy. Gradually beat in eggs and vanilla essence.
  2. Sift both flours into the butter mixture and fold in to make a stiff dough. Knead lightly and roll out to 5mm thickness, cut into shapes and place on buttered baking trays.
  3. Bake at 180°C for 10-12 minutes or until golden. Alternatively, mixture may also be rolled into balls and flattened with a fork to make round biscuits.
