ANZAC biscuits are an Aussie classic most often made on ANZAC day. They are so delicious and simple to prepare, they make a great year-round pantry staple.
Ingredients
1 cup plain flour
1 cup rolled oats
3/4 cup desiccated coconut
1 cup caster sugar
125g butter
1 tablespoon golden syrup
1 1/2 teaspoons bicarbonate of soda
2 tablespoons boiling water

Method
- Combine flour, oats, coconut and sugar in a large bowl.
- Melt butter and golden syrup together over a gentle heat. Mix soda into boiling water, then add to butter mixture. Stir into dry ingredients.
- Allowing room for spreading, place tablespoons of mixture on buttered baking trays and flatten slightly with a fork. Bake at 180°C for 10-15 minutes until biscuits are golden brown. Cool on trays for 5 minutes before transferring to a wire rack to cool completely.
