Eggplant, Bocconcini and Basil Spirali 

Everybody needs a great stand-by pasta dish and this spirali is sure to make it into your weekly repetoire. Not only is it incredibly tasty but also ready in next to no time and with minimum fuss. 

To make this pasta even easier you can use a pre-prepared pasta sauce. I like to grill and marinate my own eggplant but you can buy it ready-to-go from most delis and supermarkets.

Whatever you decide to do, it is essential to use the freshest of local Australian  bocconcini and a fruity extra virgin olive oil for drizzling!
