Flavoured butters make the most wonderful accompaniments are barbecues with grilled meats


Combine 125g softened butter with the following ingredient variations for delicious flavoured butters to serve with pasta, meat, seafood or risotto!

Anchovy and Caper Butter

20g each finely chopped anchovy fillets and capers
1 teaspoon finely chopped fresh dill

Olive and Chilli Garlic Butter

40g pitted, finely chopped kalamata olives
2 crushed cloves garlic
1-2 finely chopped chillies

Thai Chilli Butter

4 chopped small red chillies
1 tablespoon chopped fresh coriander
1 tablespoon finely chopped fresh lemongrass.
Handy Tips
All butters will keep for 1 week covered in the refrigerator, or up to 3 months frozen. Roll the butter into a log between sheets of baking paper and chill until firm. Cut into slices and serve with pan fried meat, seafood, risotto or toss through pasta or steamed vegetables


  1. Add the various butter flavourings to the salted butter, softened at room temperature; roll into a cylinder using baking paper or foil. Refrigerate or freeze until required.
